Quinoa Breakfast Skillet

Pros:
Quinoa is one of the healthiest grains you can eat! This recipe turned out great and even heats well the next day (cooking your eggs fresh of course).

Cons:
Ummmm. . .

Substitutions:
I eliminated the mushrooms all together since I don’t like them. I used chicken stock as the liquid and I fried my eggs with some sea salt and pepper. My quinoa was also a prepackaged vegetable and quinoa mix.

Verdict:
Recipe Box It….recipe box it….recipe box it!

Double Chocolate Cake

I had a craving for chocolate cake for so long so I decided to try to make one instead of buying. I’m more of a cook than a baker though. I just happened to have all the ingredients in the house to make this one!

Pros:
No butter or eggs so it’s a bit healthier. (Water and oil is used).

Cons:
I didn’t find it super moist and it seemed to be a little dense for my liking.

Substitutions:
I doubled the recipe for 2 cakes. In between the two, I used the berry sauce from my precious post on French toast. I used canned chocolate icing and made my own white frosting for the decor.

Verdict:
It satisfied my craving but I think I’ll pass on this one…not putting it in the recipe box.
