Raspberry-cream cheese muffins

Someone in the house bought store-bought muffins the other day. I stared at them everyday but the label for almost 400 calories per muffin prevented me from having one. That’s an entire meal worth of calories in one muffin!! I decided to make my own 🙂

Pros: these turned out to be a much more calorie friendly version of the muffins I will craving. They were also very simple to make.

Cons: besides the raspberried, they still aren’t super healthy

Substitutions: I decided to leave out the walnuts this round as I wasn’t craving a nut type muffin. Next time I might add a tblsp of ground flax for some extra nutrition! Really you can add anything to a solid muffin base.

Verdict: these were delicious!! I am going to recipe box them forsure. I kept half in the fridge and the other half I froze. We will see how well they keep but according to another source, you can freeze muffins for about 2-3 months. (Guess that’s another pro!)

Quinoa Breakfast Skillet

Pros:
Quinoa is one of the healthiest grains you can eat! This recipe turned out great and even heats well the next day (cooking your eggs fresh of course).

Cons:
Ummmm. . .

Substitutions:
I eliminated the mushrooms all together since I don’t like them. I used chicken stock as the liquid and I fried my eggs with some sea salt and pepper. My quinoa was also a prepackaged vegetable and quinoa mix.

Verdict:
Recipe Box It….recipe box it….recipe box it!

Double Chocolate Cake

I had a craving for chocolate cake for so long so I decided to try to make one instead of buying. I’m more of a cook than a baker though. I just happened to have all the ingredients in the house to make this one!

Pros:
No butter or eggs so it’s a bit healthier. (Water and oil is used).

Cons:
I didn’t find it super moist and it seemed to be a little dense for my liking.

Substitutions:
I doubled the recipe for 2 cakes. In between the two, I used the berry sauce from my precious post on French toast. I used canned chocolate icing and made my own white frosting for the decor.

Verdict:
It satisfied my craving but I think I’ll pass on this one…not putting it in the recipe box.

Potato and Leek Soup

Pros:
Very simple and affordable to make. I personally had to you tube how to prepare leeks since i have never cooked with them before. So I learnt something new and discovered that I absolutely love the smell of cutting and cooking leeks!

Cons:
The yogurt and chives are pointless to me. Save your money and skip them. I’m not sure how you are supposed to puree just the potatoes. I just took a couple of scoops with a strainer, pureed what was in it, and left the rest.

Substitutions:
I tried topping the soup the recipe way, with just some pepper, and even once with some chopped bacon. I also added some garlic bread to the side a few times. It changes up the same meal!

Verdict:
Recipe Box It forsure!

Broccoli Meatballs with Garlic Tomato Sauce

Pros:
Good source of veggies and protein.

Cons:
When re heated, they fall apart a bit. Costly to make.

Substitutions:
Used a pre-made marinara sauce.

Verdict:
This recipe will not be going in the box! I tried to be a vegetarian twice in my lifetime and I just can’t seem to find enough foods that I like to stay healthy doing it. This recipe wasn’t the worse but it also wasn’t good enough to get through a meal of it and actually enjoy it.

Cinnamon French Toast with Berry Sauce

Pros:
*super easy

Cons:
*I can’t even think of any

Substitutions:
*I used the agave nectar as apposed to the honey. Keep in mind it’s sweeter than honey so you don’t need as much. It also has a lower glycemic index and if you’re vegan; it’s from a plant.
*I made a lot more than the 1/3 a cup that the recipe calls for so that I could just reheat later to make breakfast even faster
*I used almond milk instead of whole milk
*I used 2 eggs instead of one

Verdict:
*I will recipe box the berry sauce as a reminder not to ever buy store bought jam again because this is way better!! I’ll skip the French toast part as it’s pretty standard in how to make French toast.

Pizza Chicken

Pros:
*This dish is quick and easy to make

Cons:
*Expensive for all ingredients needed
*Hard to roll the chicken around the mixture and have it all stay in

Substitutions:
*Instead of pasta I did a side cesar salad

Verdict:
Recipe Box It!  Overall, it was tasty and the chicken was nice and moist.
